Kitchen Confessions: Apple Crisp


As much as I love all things pumpkin, I just can't seem to let the apple go. It's just too yummy this time of year to forget about!

In one of my crazy pregnant moments, I could not stop craving apple crisp. By day three of thinking about it, I knew it was time to put my baking skills to the test and go ahead and give in to the craving. Luckily we were hosting dinner club that day so I wasn't going to be tempted to eat the entire thing on my own once it came out of the oven. 

Let me just say the smell alone was divine, but the taste was out of this world. We opted to eat it both on its own and with vanilla ice cream. Both delicious!


APPLE CRISP

Ingredients: 
- 1/2 cup of flour
- 1/2 cup of old fashioned oats
- 1/2 cup of brown sugar
- 1/2 tsp of baking powder
- 1 tsp of vanilla extract
- 1/4 tsp of cinnamon
- 1 stick of butter, diced into small chunks
- 3 to 4 large apples, sliced and peeled (note: I like to dice mine into smaller bites)


Instructions:
- Preheat oven to 375 degrees
- In a bowl mix flour, oats, brown sugar, baking powder, vanilla, and cinnamon. Blend until small crumbles.
- Combine with butter and stir until butter is well blended (somewhat melted).
- Spread apples in an 8x8 dish. Make sure they are spread evenly along the bottom.
- Pour mixture evenly over the top.
- Bake for 30-35 minutes or until the top is golden brown.
- Remove and let cool for ten minutes before serving.
