Kitchen Confessions {Bacon Blue Cheese Chicken}

Last week when I was getting over my stomach bug, but not quite able to eat anything but a few crackers, all I could think about was food.  I spent the time I couldn't actually eat, planning what I would eat in the next couple of days when I was finally better.  Chick-fil-a was definitely on the list and I looked through my recipe books to plan a few meals I hadn't made in a long time.  One of those is one of my Mr.'s favorites, Bacon Blue Cheese Chicken.  We first had this dish at his grandmother's house years ago and I knew I needed the recipe ASAP.

Bacon Blue Cheese Chicken 

Ingredients 
4 boneless-skinless chicken breasts
3T minced onions
2T Parsley
2T Basil
1T Poppy Seeds
16 oz. jar of Marie's Chunky Blue Cheese Dressing (I did use the low-fat option)
Chopped Bacon (I used the little bag of 100% bacon pieces found in the salad area)




Directions 
Combine onions, parsley, basil and poppy seeds in a small bowl.  Rub spice mixture on each chicken breast to cover.  Place chicken breast in a glass baking dish.  Pour jar of dressing over the chicken breast.  Bake uncovered at 350 degrees for 40-50 mins.  Remove from oven and sprinkle with chopped bacon.  Bake another 5 minutes.  Enjoy!


This isn't low-fat or low-calorie or even super healthy, but y'all, it is good and to me that is what matters. My kids eat it because they love anything with bacon.  Anything.  They also love ranch dressing, which I told them this had, so they ate it up. It's so delicious and easy to make, which is always an added bonus.  I made roasted sweet potatoes and a salad to have with ours and the whole meal was a hit!
