On Saturday night we had my in-law's over for dinner to celebrate Mother's Day. The Mr. grilled lobster tails and salmon and it was absolutely divine. I was in charge of the salad and appetizer so I dug through the old recipe notebook my mom gave me when I got married and found a recipe I got from her years and years ago. I honestly don't know if I have ever made this dip, but I can promise you that it will now be in the regular rotation. If you like blue cheese and bacon and want something totally low calorie (wink, wink) then this is for you! It was SO good!
Ingredients
8 bacon slices, cooked and chopped
1 tsp. minced garlic
2 (8 oz.) packages of cream cheese, softened
1/3 cup half & half
4 oz. crumbled blue cheese
3 tbsp. chopped walnuts or pecans
flatbread or crackers
Directions
- Beat cream cheese at medium speed with an electric mixer until smooth.
- Add half & half, stir in bacon, garlic, and blue cheese.
- Spoon mixture into a baking dish. (I used a 9 inch pie plate.)
- Bake at 350 degrees for 15 minutes or until golden and bubbly.
- Sprinkle evenly with chopped nuts.
- Serve with crackers.
