Kitchen Confessions: Lemon Coconut Cake

One of my biggest weaknesses is sweets. For the longest time I craved just more salty things, but ever since I was pregnant with the girls sweets have been my go to. I would rather eat a slice of Key Lime Pie over a box of french fries any day.

Over the weekend I was in the mood to do a little baking and had been tossing around the idea of something with lemon or coconut, and then thought why not combine the two?

In true form, I did a quick Pinterest search of a few recipes and then narrowed it down, and combined my favorites into the easiest possible. It could have gone either really well or really bad, but in the end I'm happy to report it was oh so yummy!

Coconut Lemon Cake recipe

It was little a little bit of southern summer right in our mouths. Give it a try and enjoy the sunshine yourselves!



Lemon Coconut Cake

Servings 6-8
Prep Time: 15 mins
Cook Time: 35 mins

Ingredients

Cake
- 4 eggs
- 2 cups of coconut sugar
- 1/2 cup of vegetable oil
- 2 tsp. of vanilla extract
- 2 cups of flour
- 2 tbsp of corn starch
- 1 tsp of baking powder
- 1/2 tsp of baking soda
- 1/4 tsp of salt
- 1/2 cup of coconut milk
- 1/2 cup of whole milk
- 2 tbsp of lemon juice
- 1/4 cup of coconut Greek yogurt
- 1 cup of coconut flakes, sweetened

Frosting
- 1 cup of coconut flakes, sweetened
- 1/2 cup of coconut flakes, toasted
- 1 jar of whipped buttercream frosting




Directions

  1. Preheat oven to 350 degrees. Grease the bottom of a large loaf pan. (I use this 9.25 x 5.25 loaf pan). 
  2. In a large bowl mix together eggs, sugar, butter and oil until well blended. Stir in vanilla extract. Set aside. 
  3. In another bowl stir together flour, corn starch, baking powder, baking soda, and salt. Set aside. 
  4. In a smaller bowl mix together milk, coconut milk, lemon juice and yogurt. 
  5. In your large bowl containing the egg mixture add in the the powdered mixture and your yogurt mixture. Once well blended add in the coconut. 
  6. Place batter in loaf pan and bake for approximately 30 to 35 minutes. 
  7. While your cake is baking mix together in a small bowl your coconut flakes and whipped buttercream for the frosting. 
  8. Once the cake is cooled add frosting and top with toasted coconut.

(Note: To toast coconut spread shredded coconut on a baking sheet and place in an oven preheated to 325 degrees. Check every minute until lightly browned. Usually it only takes a minute or two.)

Kitchen Confessions: Easy White Chocolate Lemon Fudge

We love sweet treats around here and while my kids are always begging me to bake something with them, it's honestly hard to find the down time to be in the kitchen together for a long period of time.  That's why I love easy treats that take very little prep time and even less cook time.


This White Chocolate Lemon Fudge is the perfect twist on traditional fudge and great for spring!  The best part is...it is made with very few ingredients and done in the microwave.  Just how I like it.  This fudge is great of packaging up and giving as gifts if you can resist eating it all by yourself.

Share Your Summer: Lemon


Happy Monday everyone! Today marked the first day of school for many people. Fortunately even though our school district started today our preschool decided to hold off for a few weeks, so we still have two more weeks of summer. 

I am most definitely not ready to give up summer just yet. The humidity can take it down a notch, but  otherwise summer is still in going full swing in this house. 


Nothing says summer to me more than lemon. I was so excited when this Share Your Summer topic came up because I love everything lemon, and during the summer months I indulge in the yummy flavor of lemon as much as possible. From lemonade to lemon pound cake to lemon ices you can't go wrong.  


In my lemon craving, I decided to make lemon bars. I hadn't tried to make them on my own yet, but baking is my jam and I found a easy enough recipe that I couldn't wait to try. 


I followed the instructions to a tee and couldn't wait for them to cool off so I could officially try them. The scrumptious smelling lemon flavor was almost too much to handle, but I held back and let them cool appropriately. 


I am so glad I did because the result was worth waiting for. They were the perfect bar consistency with just enough lemon tart flavor. Southern summer in a dessert form for sure. 



LEMON BARS

Ingredients
(For the pastry bottom)
- 1 cup of butter, sliced
- 1/2 cup of sugar
- 2 cups of flour

(For the lemon mixture)
-1 1/2 cups of sugar
-1/4 cup of flour
- 4 large eggs
- 2 lemons juiced (approximately 2/3 to 3/4 of a cup)

Directions
- Preheat oven to 350 degrees (325 for darker pans or glass pans)
-Blend the butter, flour, and sugar together in a food processor (will be kind of textured)
- Place pastry mixture evenly in the bottom of a greased 8x8 pan. 
- Bake for 10-15mins 
- While baking the pastry, place ingredients for the lemon mixture in a bowl and mix until sugar has dissolved. (Will still have some lumps in it.)
- Pour over the hot pastry base. 
- Bake for about 20-25 minutes or until the top begins to brown. 
- Remove and let cool completely (approximately 30 mins)
- Sprinkle powdered sugar on top. 
- Divide and serve. 

**Using a wet knife will make it easier to cut the bars.
