Friday Favorites

Happy Friday!  It's be a little while since I've shared a Friday Favorites so I have a random assortment of things to share today.  We've got some yard work, kids sports, football watching and Topgolf on the schedule for this weekend.  Hope you have something fun planned! 

 
Like I mentioned above, this feels like the first real Friday I've had in a long time because my son started back to school this week!!!!  


Our county let elementary kids start back and it has been such a great week. Seeing how excited he is to be back in school (despite all of the crazy rules and regulations they are following right now) was one of my very favorite things this week! 




My next favorite is fall youth sports.  My kids' sports are SUCH a big part of our lives right now. We spend a lot of time and money investing in our kids...not because we think they are going to be professional athletes, but because we know and appreciate all of the life skills sports and being a part of a team is teaching  them. 


I love seeing them each so dedicated to the sports they love and fall sports has been a much needed sense of normalcy for these kids. Watching them play is one of my very favorite things to do on the weekends! 



 
I've shared this here before, but my family loves snow cones.  As part of my Mr.'s birthday the kids wanted to get him this snow cone machine and it has been such a hit!  They make snow cones ALL the time and it's such a fun treat.  This would be a great Christmas gift for anyone trying to think outside of the box a little and it is definitely one of our new favorite things. 


Yesterday I shared about our Fall Break trip and it was so amazing.  Before we left I ordered a few new swimsuits because J. Crew was having a big sale.

My birthday is coming up next month and it is a big one.  As an early birthday gift my family surprised me last weekend with a Peloton bike!!!  I was so surprised and not expecting it at all, but I have ridden it every single day and LOVE it.  I'm planning to do an entire post about it in a few weeks, but if any of you have one share some of your favorite classes with me!

Fall Break Trip {Destin, FL} + The Best Filet Recipe

Last week we had the most glorious week in Destin, FL. I shared a bunch about it on our Instagram stories and had two things that I got a ton of DM's about. Y'all wanted to know details on the house we stayed in and how to make the steaks we cooked!  I'm sharing both of those things today along with a recap of our trip.


A few years ago our schools shifted to a calendar that built in a week off at the end of September.  While I am not a fan of starting back to school in July (during a normal school year...obviously this year was different), when Fall Break rolls around it is a much needed break.  

I love going to the beach in late September because the crowds are much smaller and the weather is amazing. This year we had a lot of trips cancelled due to COVID so when some of our friends asked if we wanted to rent an amazing house with them for the break we were all for it!  


We rented THIS house in Destin, FL and it was AMAZING!!!! We rented the house through VRBO and I would highly recommend this rental.  We had three families and could have fit a fourth family because it was just that big.  

It also had a guest house with a bedroom, bathroom, small kitchen and separate game room with bunk beds that we didn't even use for sleeping purposes.  The kids pretended this was their "apartment" and would hang out over there at night to play and watch TV. 


Every bedroom in the main house had its own bathroom, comfortable beds, a huge kitchen and a living room with the most incredible views.  It also had a deck we would sit out on in the mornings and at night to watch the sunset. 

The pool was nothing to get excited about, but the kids still enjoyed it.  The best part about the house was just being right on the water. The kids could run back and forth from the beach to the pool and if you needed something from the house it wasn't a big deal to go grab it because the house was just steps away.  

We stayed with some of our baseball friends who we've been around all summer and the boys had THE best time playing nonstop all week long. There was a lot of beach baseball happening, but also a ton of football, too. 

I'm normally a stay-in-a-hotel-and-eat-out-for-every-meal kind of girl when it comes to vacations because to me, it's just not a vacation if I have to cook and clean.  However this trip was like we had our own personal chefs traveling with us. Not only do my friends like to cook, they CAN cook!  


We ate (and drank) very well during our trip. When I shared about our steak night on Instagram I got a ton of questions and I promised y'all I would share the details.  I got my dear friend, Jaime, to send me how they cooked them. 


Ingredients:  

  • Filet size of your choice - cut from butcher shop - we frequent Whole Foods - ours were 8 oz
  • Sprigs of fresh Thyme - 1 bunch per 2 steaks 
  • Peeled fresh garlic - 1 head per 2 steaks 
  • Two sticks of Kerrygold butter - cut into cubes

Directions: 

  • One hour before cooking lay steaks out to come to room temperature and season both sides and edges with salt and pepper. 
  • Preheat oven to 500 degrees. 
  • Heat cast iron skillet with 1 tbsp of olive oil until it's smoking hot. 
  • Add two tbsp of butter to the pan. 
  • Add steaks to the pan - leave for 2 minutes. 
  • Dump butter into heat proof bowl. Add two more tbsp of butter, swirl around pan. Flip steaks to other side - cook 2 minutes. 
  • Dump butter one more time and add 4 tbsp of butter and whole peeled garlic cloves. Baste steaks with melted butter. 
  • Put pan into preheated oven. 
Cook times vary based on thickness of the steak. Ours were 2.5" and we followed: 
Medium Rare: 4 minutes in oven 
Medim: 7 minutes in oven 
Medium Well: 10 minutes in oven 
Well Done: 12 minutes in oven. 

  • Baste again in butter, garlic and thyme. 
  • Remove steaks to plates and let them rest, but not keep cooking. Rest 3-5 minutes before cutting. 
  • Enjoy!

Self-Care Tips for Busy Moms!

Did you know September was Self-Care Awareness month? Yes, we realize we are now into October, but a today was my elementary schooler's first day of Face-to-Face school in over 6th months, now is the PERFECT time to practice a little self-care. Fall Outdoor Decor

Bare with us friends. One last little bit of Fall outdoor decor (maybe...I can't make any promises) before we switch to all things Halloween. Last week was our Fall Break and right before we made our way to the beach I finally decorated our outdoor spaces for Fall. I wanted to come home and it feel like Fall even though it doesn't quite feel like Fall yet.

I did the Fall Surprise Porch for my friend earlier in the season, but lost my Fall mojo after that. Or really I was blinded by the hot summer-like temps and the lure of a cool pool with a side of fruity drinks. I soaked it all up. 

But it was time to succumb to the fact that Fall is here. Whether the weather agrees or not. 

And I'm fine with that. As long as we just skip right over Winter and go straight to Spring. #winteristheworst

One of the things that drew me to our new house is the large Southern style front porch. I had furniture from our old house that I loved, but it didn't fit right once we put it on the porch. So I opted to get these rockers instead and love the change. Nothing says Southern porch like a classic rocking chair, am I right?

The other side of the porch has this fun porch swing that the previous owners left behind. At first I was going to get rid of it, but then it grew on me. 



I love mums, but have the toughest time keeping them alive. I found these pre-potted floral arrangements in Fall colors and they've done so well!



The back porch received a few touches of Fall as well. For this area I have a lot of navy and green, so I went with a few pops of color to bring it all together for a more Fall look.

Virtual School {Spoiler Alert: It isn't working for us!}

Tomorrow will end our 6th week of virtual learning. It started terribly with multiple technology issues all around. 


Last week I had the thought that we've gotten into a groove and that it has actually been going better. I quickly stopped myself though and realized that it hasn't gotten better, we've just all become absolutely numb to this new normal. 

Last March when the kids were sent home for our 2 week lock-down to flatten the curve, I never could have guessed that they would have been out of school for 6 months.  You read that right...it has been over 6 months since my kids have been in school.  At first our county gave us a choice to send kids back face to face or start the school year virtually. However, just a few weeks before school was set to begin, they took that choice away and made everyone start virtually. Instead of new backpacks for the first day of school the kids got computers. 





We tried to make lemonade out of lemons. We set up cute work spaces for each of the kids, let them decorate their computers with stickers, and just about anything else I could think of to make this fun and exciting for them, but that fun and exciting didn't last long. 





The teachers, bless them, are doing the very best they can. But this is not school. Having to do PE alone is not school.  Having to do the majority of their work digitally instead of with paper/pencil is not school. 


Eating snack alone and not even being able to raise your hand and ask a question when you don't understand something is not school.  

Instead of getting excited about lockers, changing classes, and meeting new friends for my 6th grader, she got anxiety, stress, and confusion of starting middle school on-line. She also got a new wave of headaches EVERY SINGLE DAY from staring at a computer screen all day. 

My middle schoolers only get instruction in each class twice a week.  TWICE!  In what education world is it ok to have math twice a week?  Heaven forbid the days that they have technical issues either on their end or the teacher's side of things and they end up getting that class only once a week. How in the world do people making these decisions expect that our kids are not going to be behind?  

These kids feel so isolated. I have always thought that the social part of school is just as important as the academic side of things and it is truly sad to see my kids, alone every day, just wishing they could be with their friends.  

They can't even all have lunch together or play outside for "recess" because of different schedules!  So when my son is done with "school" for the day my older two are just getting started and I have to constantly remind him to be quiet so their Zoom calls aren't interrupted. 

Because of the different schedules I literally feel stuck in my house all day long. I've finally started to be able to run a quick errands or take a quick walk during their school hours, but I never feel like I can be too far away because there are a million "Mom I need you" calls for help a week.  I'm so thankful that I am able to be home and be there to support my kids with whatever they might need help with, but I just think about the many other students who don't have the same kind of support.  There are thousands of kids who have never once logged in to our online learning platform.  Who's looking out for those kids?  The education gap is only going to continue to widen and after 6 months with no school I can't imagine the regression teachers are going to be faced with when kids finally do get back in the classroom. 

My kids have been playing sports since May. Stores are open. Daycares are open. Restaurants are open. Many other school around us are open.  All of those things are going just FINE!!! My kids, who are all wishing they could just go to school, see their friends, and raise their hands to ask their teachers a question, are not fine. 

I have always been a huge supporter of public schools.  We built our house in one of the best public school districts because we felt strongly about our kids attending public school school vs. private.  My mom was a public school teacher. My husband and I both went to public schools. I was a public school teacher before having kids and now I currently serve as PTA president for one of our public schools.  However, this entire process has completely made me change my opinion.  It's sad, but so many other families feel the exact same way and have either pulled their children to home school them or put them in private schools.  

I don't pretend to know all of the answers, but I do know that kids can be in school and it can be successful. I'm so thankful for all of the teachers who are working harder than they ever have to try and reach these kids over a computer screen, but it will NEVER replace the in-person teaching and learning that our children so desperately need! 


Our county is finally offering a Face-to-Face option for Elementary kids starting in a few weeks and my son has never been happier. It will be several weeks after that date that my girls will be able to start back to Middle School and over a month away for High Schools to go back.
