Kitchen Confessions {Chicken Roll-Ups}

There's a reason this is the first recipe I am sharing on this blog.  I used to love to cook.  It was fun to search for a new recipe, shop for the ingredients, and lovingly prepare a meal.  Then I had kids.  And that would be when all of that changed.  For most parents, kids are picky eaters.  Their opinions change from day to day and what they love to eat one day, is not the same the next day.  It can feel nearly impossible to cook something the whole family will like and I honestly just don't enjoy spending a lot of time on something I know my kids will turn their noses up at.  That's why when I do cook I want it to be a crowd pleaser.  A meal that everyone will eat, one that won't take forever to prepare, and one that I can usually stretch for a couple of days.

One of my go-to meals for my family is something I named Chicken Roll-Ups.  I know, really fancy, huh?  I honestly have no idea where this recipe came from. I've been making it for some time now and I think I kind of created it myself.  If my memory serves me correctly, I think I got a little inspiration from Pinterest recipes and maybe a little from the good ol' Pampered Chef parties I used to attend pre-kids.  What I do know is this - it is quick and easy to prepare, everyone in my family will eat it, and it feels like a win-win all around.


2-3 boneless, skinless chicken breasts
1 package cream cheese
1 pack of ranch dressing/seasoning mix
1 cup of shredded cheddar cheese
1 can of Pillsbury crescent rolls

  • boil 2-3 chicken breast in the crock-pot covered with water for about 6 hours on low.  

(Side note- Jen and I L-O-V-E, LOVE our crock-pots. Like seriously we would cook every meal with our crock-pots given the chance.  There will be many, many more recipes and stories involving this brilliant piece of culinary equipment in the near future...I mean, it is almost FALL and fall weather just screams crock-pot meals so get ready people!)

  • Remove chicken breasts from crock-pot and shred using forks. (If it's really done it just basically just fall apart.) 
  • In a large mixing bowl combine shredded chicken with cream cheese, ranch seasoning, and shredded cheddar cheese.  
  • Unroll crescent roll dough and separate into 8 triangles.  
  • Scoop 1-2 heaping spoonfuls of chicken mixture onto each dough triangle and roll-up (hence the name of this dish, Chicken Roll-Up.)
  • Continue with all crescent rolls and bake as directed on the crescent roll package.  350 degrees for about 9-12 minutes.  
That is it.  I told you it was simple.  And I promise it will be a crowd pleaser.  My kids love it, my husband loves it and last time I made it while I was living with my in-laws, they loved it, too!  I usually just add a salad and just call dinner done.  It doesn't get much easier than that.  

***Note- Sometimes you might have leftover chicken mixture, especially if you don't go really heavy when scooping it onto the crescent rolls.  I have done one of two things in this scenario.  1 - I use a second can of crescent rolls to make extra so we have left-overs the next night or 2- (and my personal preference) I freeze the remaining chicken mixture and use it for a later date.  That way all I have to do is pull it out to thaw, make sure I have a can of crescent rolls in the fridge, and I have an easy meal that is ready in no less than 15 minutes the second time around.  Enjoy!
