Kitchen Confessions: Monster Cookies

At the beginning of this week I blogged about healthy dinners, and now dessert. It's all about balance people. Balance.

Here's my confession today...we are sugar-aholics. It's no hidden fact that my entire family has a sweet tooth - I can throw down in the baking department, we drink milkshakes like it's our job (could that be a job??? Like milkshake tester - is that a thing? Because I would totally want that job!), and frosting is our love language.

In reality I do usually try to limit our intake of sugar, if only for my sanity, but with holiday after holiday lately it seems like every where I turn there is a sweet or a candy that I just have to eat. Gah - not the best when you are trying to lose last few pounds of baby weight.

I mean check out that stash! Who needs all that?!? Although look closely and there is an organic lollipop. Does that even count? I might save that one...

Well the other day when I finally declared that all leftover Easter candy really needs to go, I apparently took that as really needs to go right into a cookie. #noshameinmycookiegame

I had been eyeing this Monster Cookie recipe I found on Pinterest from The Semi Sweet Sisters for awhile, and figured this was the perfect time to give it a whirl.

Cute was so excited to help, but after letting he and L.C. help with my last baking endeavour, I am a little skittish. If we ever sell this house I apologize to the future home owners for the key lime pie cupcake remnants that might or might not be on various parts of the kitchen ceiling.

I caved though at one bat of those sweet baby blue eyes, and gave him a teeny tiny amount of dough to gently fold in some M&Ms. I honestly do enjoy that he loves being in the kitchen helping cook and bake. Hopefully that is something he will always love to do...right along with his great love of swiffering (You're welcome future wife.)

After much anticipation during the pinning, baking, and waiting process I would say these more than exceeded our expectations. They were so easy to make and so so yummy! 

Now to go run more, and to for real throw away all the rest of the Easter candy! (and the Valentine's Day candy, and Christmas, and Halloween...)


Prep Time: 10 mins
Cook Time: 11-13 mins
Serves: 24-30 depending on sizing

- 3 eggs
- 1 1/2 cups of brown sugar
- 1 cup of sugar
- 2 teaspoons of vanilla
- 2 teaspoons of baking soda
- 1/2 cup of butter, softened 
- 1 1/2 cups of natural peanut butter
- 4 1/2 cups of oats
- 1 cup of semi-sweet chocolate chips
- 1 cup of M&Ms
- 1/2 cup of peanuts

1: Preheat oven to 350 degrees.
2: In a large bowl mix on medium eggs, sugars, vanilla, baking soda, butter, peanut butter, and oats. 
3: Once mixed completely gently stir in chocolate chips and peanuts.
4: Scoop approximately two inch rounds of dough onto cookie sheet leaving approximately 1-2 inches apart. Repeat until dough is used up. 
5: Bake for 11-13mins.
