We are not ones to shy away from a party or reason to celebrate, and let me just tell you, Mexican food is our jam. So today we have no problem lifting a nice frosty frozen Margarita and toasting Cinco de Mayo (totally after 5p.m. of course).
In honor of the 5th of May, we thought we would share our the most delicious dip recipes. If I do say so myself they are super yummy and quite possibly restaurant worthy.
Guacamole Dip
Ingredients:
- 3 Avocados halved, seeded and peeled
- 1 lime, juiced
- 1/2 teaspoon of cumin
- 1/2 teaspoon of cayenne
- 1/2 teaspoon of sea salt
- 1 medium onion, diced
- 1 roma tomato, diced
Directions:
- Place the prepped avocados in a large bowl.
- Either squeeze the lime juice directly on, or use pre-juiced to coat. Drain and reserve to the side.
- Mix cumin, cayenne, and sea salt into bowl with avocado.
- With a fork or spoon begin mashing the avocado.
- Stir in the tomato and onion.
- Add one teaspoon of lime juice.
Let mixture sit one hour before serving.
And then my absolute favorite...cheese dip! This dip is as close to the white cheese dip served in Mexican restaurants that I have found. Yum!!!

White Cheese Dip
Ingredients:
- 1 pound of white American cheese, cubed
- 1/2 cup of milk
- 1 tablespoon of butter or margarine
- 2oz can of green chilies, chopped
- 2 teaspoons of cumin
- 2 teaspoons of garlic powder
- 2 teaspoons of onion powder
- cayenne pepper, add to taste
Directions:
- Place milk, cheese, and butter in a saucepan over low heat.
- Stir frequently until cheese is melted.
- Stir in chilies, cumin, garlic powder, and onion powder.
- Add more milk if too thick.
- Stir to heat evenly.
Serve immediately while hot.
I used this molcajete to serve my cheese dip and it is always a hit. When we visited Mexico years ago, all of the restaurants would serve us chips and dip in one and the moment I got home I knew I had to have one. Oh wow, you just talked about my TWO FAVORITE DIPS! Good thing it's Taco Tuesday so we're having mexican tonite anyway. I already have guac on the menu, but need to make the cheese dip too!
