Easy S'Mores Dip Recipe


Now here's a recipe I can't believe I've never shared before - the S'mores Dip Recipe! I've made it a million times. After I shared a peek of this one I made on Stories over the weekend, friends kept messaging for the recipe. I woke up to at least 20 messages asking for it. I was going to just forward a past post, and realized I didn't have one. 

What?! 

Well that gets rectified today! 

The S'mores Dip is SO easy to make. It can also be altered in a ton of ways. I always use grahams to dip with, but you can also get creative with fruit, pretzels, etc. 

It's a total crowd pleaser, and if you have any left over it's easy to reheat and serve again next day. 



S’MORES DIP RECIPE 

INGREDIENTS 

  • 1 bag of semi-sweet chocolate chips
  • 1 bag of marshmallows (large or small)
  • 1 box of graham crackers (I usually grab the regular and a box of the chocolate)
  • Optional: Reese’s, Snickers, other chocolate candies


**Note: I use 8x8 foil pans for this. I’ve used glass dishes and iron skillets which work just as good, but are tough to clean between the marshmallow and melted hardened chocolate. The foil pans are easy to reheat and a quick throw away when done. 


INSTRUCTIONS 


1: Pre-heat oven to 425 degrees. 

2: Line pan with a layer of your chocolate. 

3: Top chocolate with marshmallows. 

4: Bake in oven for approximately 5-8 mins or until chocolate is melted. 

5: Turn on broiler for 1 minute to toast the marshmallow. 


Serve and enjoy!

Pineapple Mule Recipe



Happy Friday friends! Even though it was a short week - it was a doozy of one. We're already counting down the hours until we can log-off for a few days. 

It's also a hot one. So Summer is still going strong here. On deck for the weekend we have soccer, soccer, baseball, flag football, cheer, and more soccer. 

All outside. 

So to cool off we have the pool, a cranked down A.C., and this delicious Pineapple Mule on the ready. All to be thoroughly enjoyed, but not necessarily in that order. ;)

Sharing the last recipe from our Summer Recipe series, and it's totally a "saving the best for last" situation.  



PINEAPPLE MULE RECIPE

INGREDIENTS
- 2 oz of vodka
- 2 oz of pineapple juice
- 2 oz of lime juice
- 1/2 cup of ginger beer

DIRECTIONS
1. Fill a copper mug with ice. 
2. Pour vodka, ginger beer, pineapple juice and lime juice over ice. 
3. Gently stir and enjoy!

Pineapple Mimosa Recipe


It's official - all the kids are back in school (in some capacity)! But it still feels like Summer. Cross over the two and we feel like that deserves a little something to celebrate. 

Or at least a little something to take the edge off both the heat and re-learning algebra. 

We present to you...


...the Pineapple Mimosa! 

This is the next recipe in Summer Recipe Series and it's the perfect easy cocktail for this time of year. Baby showers, ladies brunches, Sunday mornings by the pool...it has you covered. It's also the one our friends like to recreate most whenever we break out the Mom-mosa Bar

PINEAPPLE MIMOSA RECIPE

Ingredients
- 3 oz of champagne
- 1 oz of pineapple juice
- Optional garnish: pineapple slices

Directions
1: Fill champagne flutes with chilled champagne. 
2: Add pineapple juice. 
3: Serve & enjoy!

Blue Hawaiian Drink Recipe


Last year a travel magazine asked us to create some content for their upcoming Summer issue. We came up with a fun Hawaiian theme, and had a huge spread within the publication. As part of our agreement with the magazine we couldn't publish the material on our own for one year. Now that that year has passed, we thought we'd share some of the yummy we created with you guys. 

The goal was to create bright, fun recipes that screamed "tropical paradise" - even if you were just creating a dinner for two in your backyard. Also staying true to our brand - we made these super easy. 

And with lots of alcohol. 

You're welcome. 

And since we all are wishing we were somewhere tropical right about now (thanks 2020!), we thought we'd share these throughout the next few weeks as we get into the heart of Summer.

First up - the Blue Hawaiian Drink. And you're being warned now. It's almost too good.


THE BLUE HAWAIIAN COCKTAIL RECIPE

Ingredients
- 1 oz coconut rum
- 2 oz pineapple juice
- 1 oz of Blue Curacao
- Optional garnish: pineapple slices

Directions
1: Fill glass with ice. 
2: Pour rum, pineapple juice, and Blue Curacao over ice. 
3: Stir well. 
4: Garnish with pineapple and enjoy!

6 Delicious Rotisserie Chicken Recipes

I usually relish my time in the kitchen. It’s my happy place. Lately with school, work, after school activities, and my husband being out of town, I’ve reached for the rotisserie chickens at the grocery store more times than I care to admit. Because well, LIFE! I’m sharing 6 recipes using those boring old rotisserie chickens that will make you leave your mom guilt at the door and impress your active family. These days it’s so easy to find organic rotisserie chickens so you can rest assured.


First up are these Creamy Chicken Sheet Pan Nachos! A real family pleaser sure to check off all the boxes. Easy, check. Quick, check. Delicious, check. Picky Eater approved, check. Dinner plates optional, check!


Creamy Chicken Sheet Pan Nachos recipe and 5 other easy and delicious recipes to make with rotisserie chicken

Creamy Chicken Sheet Pan Nachos

INGREDIENTS NEEDED 

For the chicken
  • ½ C sour cream
  • 1 rotisserie chicken (I like to buy organic ones)
  • ¼ tsp oregano
  • ½ tsp cumin
  • ½ tsp paprika
  • ½ tsp chili powder
  • ½ tsp onion powder
  • ½ tsp garlic powder
  • ¼ tsp kosher salt
  • ¼ tsp black pepper
  • Pinch of cayenne


For the Nachos
  • 1 Can (15.5 oz) black beans, rinsed and drained
  • 2 C sharp cheddar cheese
  • 9 oz tortilla chips
  • 1 shallot or ¼ red onion, thinly sliced
  • 3 mini sweet peppers or 1 small bell pepper, thinly sliced
  • 1 pint grape tomatoes, sliced in half
  • 1 C shredded iceburg lettuce
  • Sour cream
  • 1 avocado, cubed
  • Pickled jalapenos (optional)


INSTRUCTIONS
1: Preheat your oven to 350 degrees.
2: Line a sheet pan with aluminum foil, or parchment paper.
3: Mix together the sour cream, oregano, cumin, paprika, chili powder, onion powder, garlic powder, salt, pepper, & cayenne.


4. Tear the meat off of the rotisserie chicken and toss into the sour cream mixture. 


5. Spread a layer of tortilla chips on the bottom of the sheet pan. Top with the black beans, then the onions, and bell peppers. Then evenly spread the chicken on. Sprinkle with the cheese and place in the bottom rack of your oven for 15 minutes, or until the cheese is melted and bubbly. 





6. Pull the pan out and top with your cold toppings, starting with the lettuce then tomatoes, avocado, sour cream and pickled jalapenos (we save these for individual plates depending on everyone’s heat tolerance). 

7. Serve on plates, or dig into the pan as is. Drink a nice cold margarita and enjoy!

Kitchen Confessions: Buffalo Chicken Sliders





These Buffalo Chicken Sliders are quick and easy to make! Baked to cheesy perfection and beyond delicious! Hands down the perfect game day delight!


Football season is winding down, but the most exciting part is ramping up. It's playoff season, and the   Big Game is just around the corner! I love this time of year. You are on the edge of your seat seeing who will make it and who just misses their chance. The ups, the downs, the almost heart attack moments, the split second change of game moments...football will always be one of my favorite sports to watch and playoff season will always keep me coming back for more. 

Sadly, our home team is already out for the season, but we cheered our little hearts out this past weekend during the game. Have faith Atlanta fans this year wasn't our year for football, but I have a good feeling it will be soon!


And if the thrill of the game isn't your thing, there is all the game day food to celebrate. All the super yummy, delicious food! 

Top of the list for our hungry game day crew? These Buffalo Chicken Sliders!


They are to die for delicious, and I may or may not have had a left over one for breakfast this morning. 


The sliders contents are extremely easy to make, and I usually pop them into a slider bun, bake for a few minutes and they are game day ready. These Pepperidge Farm Bakery Classics slider buns are my favorite to use. They are just the right size! They also don't contain any artificial flavors, or high fructose corn syrup. The Pepperidge Farm Slider Buns come in five flavors - white, sesame, potato, sweet & soft, and wheat. My go-to are the Sweet & Soft buns, but I usually grab another flavor or two so our guests can have a variety.

Sliders always make for the perfect game day snack, and are the perfect size to have more than one without feeling too full. Which is a great thing, if you're like me and start to do a little stress eating during those nail biter games.

HOW TO MAKE BUFFALO CHICKEN SLIDERS

Serves: 8-10
Prep Time: 10 mins
Total Time: 20 mins

** If you are using a slow cooker to prep your chicken total time is 4 hours.**


Ingredients
- 2 party size packages of Pepperidge Farm Slider Buns
- 3-5 boneless, skinless chicken breasts (or 3-4 cups of shredded chicken)
- 8 oz. of buffalo wing sauce
- 1 packet of ranch seasoning
- 1 cup of shredded cheese


Directions
1: Combine chicken, buffalo wing sauce, and ranch seasoning in a slow cooker. Cook on high for 3 hours. 
2: Shred chicken with two forks in the slow cooker and continue cooking for 30 more minutes. 
3: Preheat oven to 350 degrees.


4: In a greased 9x12 dish place slider buns in rows. Fill each bun with a large spoon full of buffalo chicken mixture and top with a sprinkle of cheese.


5: Bake for 5-10 minutes or until cheese is slightly melted and bun is lightly toasted.
6: Serve and enjoy!


Optional: We sometimes serve with a side of ranch dressing for guests to drizzle on top or dip their slider in. So yummy!

Kitchen Confessions: Gingerbread Trifle


The  holidays are the one time of year I get excited about actually being in the kitchen. There are so many yummy treats and warm comforting foods to make. Top of the list is gingerbread! It just makes the house smell SO GOOD! Not to mention it tastes all sorts of yummy.

Quick and easy holiday dessert recipe. Gingerbread Trifle recipe that is easy to make, and is the perfect holiday dessert.

It is super easy to make (because if you know me by now, I am all about the easy), and doesn't take much prep time at all. It's a total crowd pleaser, and travels well if you have to bring a dessert to a holiday party or travel on the holidays.

Celebrating the Holidays with Apple Cranberry Sweet Tea Punch


Hurray! The holidays are officially here and in full swing! I love love love this time of year. From the fun parties, to the anticipated arrival of the big guy delivering goodies, to the panic about moving that elf, to all the yummy treats (mmm...the treats!) - bring it all on! 

My absolute favorite thing is being a host during this time of year. I love filling my home with the delightful chaos of the holidays. Witnessing all the happy around me, and creating lasting memories with all the special people in our life fills me with joy. Not to mention the festiveness of the holiday season makes it super easy to plan a little soiree. The theme is in the holiday itself and the options of creativity are endless. Whether we choose to celebrate all the holiday things with an ugly Christmas sweater party or a more upscale dinner, I've learned the best way keep the stress at bay and enjoy your role as host is to have a few go-to seasonal food and drink recipes that work for any situation. Keep it simple. Keep it easy. Then you get to keep it FUN


And as any good southern host knows, no event worth speaking about is an event without sweet tea. Milo's Tea is without a doubt one of our favorite southern staples, and when it comes to serving our guests we only want to serve them the best tasting.  


I'm not the only huge fan of Milo's Tea. It's award winning taste has been savored for generations.  Milo’s Tea was created in the famous Milo's restaurant founded in 1946 by Milo and Bea Carlton after Milo returned from serving his country in World War II.  The teas are all naturally brewed with no colors, acids, additives or preservatives to keep in line with Milo and Bea's vision for using high quality ingredients to never sacrifice on taste. Today, Milo's Tea is still a family owned company located in Bessemer, Alabama. So quite literally every sip provides a little south in your mouth.


I always make sure to have a variety available on hand though, and often during the summer months I  often serve our second favorite southern staple - their delicious lemonade. It comes in a variety of different options (no calorie, unsweet, and a tea lemonade combo), but my favorite to serve is Milo's All Natural Sweet Tea because it is sweetened with pure cane sugar. 


I found Milo’s at my local Target in the refrigerated juice and dairy section, but they are available at lots of retailers. Find a store near you by using the store locator.


The All Natural Tea is also my favorite to mix in to make other tea based drinks. I'm never one to shy away from a yummy cocktail recipe during the holidays, but for any gathering this time of year I try to have a more family friendly drink available since guests of all ages are in attendance. My go-to drink is this delicious Apple Cranberry Sweet Tea Punch. It not only looks festive, but it tastes it too! It is beyond yummy and the moment the holidays roll around I can't wait to serve it to anyone and everyone (and have a drink or three myself). It is just one of those drinks that is suitable for any party, and made with only a few ingredients we already have in our pantry.  


The Apple Cranberry Sweet Tea Punch is super easy to make. Depending on the situation you can craft this delicious holiday crowd pleaser to be a single serving or easily make it in large batches. Either way in just a matter of minutes you have a delicious holiday beverage. It is always a huge hit, and is perfect for serving even to our tiniest of guests.

HOW TO MAKE APPLE CRANBERRY SWEET TEA PUNCH


Serves: 10-12
Prep Time: 5 mins


Ingredients
- 2 cups of apple juice
- 2 cups of cranberry juice
- 2 cups of sparkling water or club soda
- 2 apples, sliced
- 1 cup of cranberries 


Directions
1: In a large punch bowl mix chilled sweet tea, apple juice, cranberry juice, and sparkling water. 
2: Add slices of apples and cranberries for garnish. (Note: Freeze cranberries beforehand to keep punch cooler longer.)
3: Serve and enjoy!
