Kitchen Confessions: Spicy Crab Dip

I love appetizers.  Crackers with dips or spreads are my jam and I'd be happy to eat them for dinner just about every night of the week.  I love easy, make ahead recipes like this Spicy Crab Dip that I made for our Father's Day celebration last weekend.  I was able to put everything together the night before and then just popped it in the oven right before we were ready to have it.  Everyone LOVED it, even though some of my kids didn't know they were eating crab until after the fact. We followed this up with a big steak dinner, but honestly, I would have been fine with just this! 


Spicy Crab Dip 

Ingredients: 

8 ounce package of cream cheese, softened 

1/2 cup mayonnaise 

1/2 cup sour cream 

1 cup shredded sharp cheddar cheese 

1 T dried diced onion 

2 cans (6 ounces) lump crab meat, drained

1 tsp all purpose seasoning 

1/2 tsp Worcestershire 

1 T lemon juice 

2 T finely chipped parsley 

a few shakes of Tabasco 

fresh ground pepper, to taste 

1 jalapeño, diced 

Directions: 

1. Preheat oven to 350 degrees. 

2. Place cream cheese, mayonnaise, and sour cream in a mixing bowl and stir until smooth. 

3. Add in onion, all purpose seasoning, Worcestershire, lemon juice, parsley, Tabasco, pepper and jalapeño, stirring until well combined. 

4. Fold in cheddar cheese and crab meat. 

5. Transfer to baking dish. 

6. Bake at 350 degrees for 30 minutes until bubbly.  

7. Serve with crackers, baguette slices or pita chips. 

8. Enjoy!

Sausage Pimento Cheese Dip Recipe

'Tis the season of comfort eating and yummy dips. Today I'm sharing a quick and easy dip recipe, and be warned - it's life changing. 

Well, that's a tad dramatic. But it seriously this Sausage Pimento Cheese Dip will have you wondering where it's been all your life. I've made it three times in the past week and each time it was g-o-n-e GONE in less than ten minutes. 

I wish I could give credit to the person I found this dip from. I took a screen shot of the recipe from Pinterest, but forgot to save it.  So if this is your dip recipe - THANK YOU! 

All my family, friends, and recent guests would also like to thank you. Because if you know my culinary skills, I might have actually earned myself a little kitchen cred by making this Sausage Pimento Cheese Dip.  





SAUSAGE PIMENTO CHEESE DIP


Ingredients
  • 1 pound of breakfast sausage, ground
  • 1 8oz block of cream cheese
  • 1 8oz container of sour cream
  • 2 cups of shredded cheddar cheese
  • 2 cups of shredded Parmesan cheese
  • 1 4oz jar of diced pimentos

Instructions
1: Preheat oven to 350 degrees
2: Grease an 8x8 baking dish (or similar sized dish).
3: Brown ground sausage on stove top into crumbles.
4: In a large mixing bowl blend cream cheese and sour cream.
5: Mix in both cheeses and pimentos.
6: Add sausage crumbles to mixture.
7: Place mixture evenly into baking dish and bake for approximately 25 mins, or until edges are bubbling.
8: Serve with chips, wheat thins or bread.
9: Enjoy!

Kitchen Confessions: Cream Cheese Bacon Cheddar Dip

 A few weeks ago I shared about few easy dips that were my new go-to recipes when I needed an appetizer. The Black Bean, Corn & Feta dip is delish and literally takes minutes to make.  Bonus, it's relatively healthy, too.  Today's dip is still easy to make, bakes in just 20 minutes, and not healthy, but in the yummiest way! 

It's the perfect dip for watching football, it's always a crowd pleaser, and you can make it ahead of time and just warm it up when you are ready to serve it. I made this on Saturday when it was raining and we were happy to be stuck at home watching football.  It was the perfect comfort food for that kind of day. 


Cream Cheese Bacon Cheddar Dip

Ingredients: 

  • 1 package cream cheese, softened 
  • 1 cup mayonnaise 
  • 1 cup shredded cheddar 
  • 3-4 green onions, diced 
  • 8 slices bacon, crumbled 
  • hot honey (optional) 
Directions: 
  • Mix all ingredients and spread into pie plate. 
  • Top with crumbled bacon and sprinkle a little extra cheese on top. 
  • Bake at 350 degrees for 20 minutes. 
  • Drizzle with hot honey (optional). 
  • Serve with an assortment of crackers. 
Speaking of the hot honey...I am obsessed with this stuff.  The Mr. and I went to a restaurant that served a wood-fire pizza drizzled with hot honey and it was delicious!  I searched for something similar and found this Kroger brand hot honey at my local grocery store.  We now put it on everything. We do make-your-own-pizza night and I drizzle it on my pizza, I put it on this dip, on roasted brussels sprouts...all sorts of things! I honestly don't even like honey, but I love this because it gives it just a little sweetness with a kick. If you have a Kroger near you be sure to grab this!

Kitchen Confessions: Black Bean, Corn & Feta Dip

A few weeks ago we went over to some friends for dinner and I was in charge of bringing the appetizers. I don't love to cook, but I love making appetizers.  I made two different ones and they are both great for a crowd, easy to make, and great for tailgating!  Since football season is finally underway and most of us are going to be watching a lot of football at home this season, I thought I would share these easy dip recipes with y'all!  Today's recipe has been passed around and shared by several of my friends. The first time I had this one I knew I wanted the recipe because I love all things with feta cheese! 


Black Bean, Corn & Feta Dip 

Ingredients: 

2 cans black beans, drained and rinsed 

2 cans white shoepeg corn, drained

1 package crumbled feta cheese 

1 bunch scallions, chopped 

1 cup apple cider vinegar 

1/2 cup olive oil 

1 tsp garlic powder 

salt and pepper to taste 

Directions: 

Combine all ingredients and serve with Scoops tortilla chips or Fritos. That's it...so easy and simple!

Kitchen Confessions {Blue Cheese & Bacon Dip}

Now that temperatures are warming up we are grilling more and that means less time for me spent in the kitchen.  When we grill out I do love preparing a yummy appetizer though and that was exactly what I did last week.

On Saturday night we had my in-law's over for dinner to celebrate Mother's Day.   The Mr. grilled lobster tails and salmon and it was absolutely divine.  I was in charge of the salad and appetizer so I dug through the old recipe notebook my mom gave me when I got married and found a recipe I got from her years and years ago. I honestly don't know if I have ever made this dip, but I can promise you that it will now be in the regular rotation.  If you like blue cheese and bacon and want something totally low calorie (wink, wink) then this is for you!  It was SO good!



Ingredients
8 bacon slices, cooked and chopped
1 tsp. minced garlic
2 (8 oz.) packages of cream cheese, softened
1/3 cup half & half
4 oz. crumbled blue cheese
3 tbsp. chopped walnuts or pecans
flatbread or crackers

Directions
  • Beat cream cheese at medium speed with an electric mixer until smooth.  
  • Add half & half, stir in bacon, garlic, and blue cheese. 
  • Spoon mixture into a baking dish. (I used a 9 inch pie plate.)  
  • Bake at 350 degrees for 15 minutes or until golden and bubbly.  
  • Sprinkle evenly with chopped nuts. 
  • Serve with crackers.
