Kitchen Confessions: 8 Great Tailgate Recipes

One fun thing about tailgating is all the yummy food and drinks you get to consume. Today we thought we would share some of our favorite recipes that we made for Saturday's party. All are quick, easy, delicious, and promise to make any tailgate party quite tasty!



Carrie Beth's Cowboy Caviar is always a HUGE hit whenever she makes it!

Cowboy Caviar
 Ingredients:
- 2 cans of whole kernel corn, drained
- 2 cans of black eyed peas, drained
- 1/2 red onion, chopped
- 2 avocados, peeled, pitted & diced
- Bottle of Italian dressing

Instructions:
(1) Mix all ingredients in a large bowl and stir in approximately 1/2 the bottle of Italian dressing.
(2) Chill for at least one hour in the refrigerator.

And done!

Special notes from Carrie Beth...
"This makes a lot, so plenty for a large group or a party. It is great as a dip, but we have also had it on top of our grilled chicken in the summer for dinner. Best if eaten within a day because the avocado starts to turn brown."

Next is one of my all-time favorites, Buffalo Chicken Dip. I could eat this stuff 24/7. I completely forgot to take a photo of the dip during the party (again, I blame it on the juice). 

Buffalo Chicken Dip
Ingredients: 
- 2 to 3 boneless skinless chicken breast, cooked & shredded
- 8 oz. pkg of cream cheese
- 1 1/4 cup shredded cheese
- 1/2 cup of shredded mozzarella cheese
- 1 cup of ranch dressing
- 1/2 cup of hot sauce

Instructions: 
(1) Mix all ingredients together
(2) Bake at 325 degrees for 20 mins, stir, then continue baking for 25 minutes or until all cheese is melted. 

Special note: If you feel like you want to use your crockpot or have a place to plug it in at your tailgate you can mix all ingredients and then cook on low. Should be tailgate ready within one hour. 

Speaking of alcohol, here are two of the drinks featured at this party, The Bulldog Brew and The Blackout. The Bulldog Brew is actually a shower punch drink that our dinner club modified a few years ago. The Hubs has dubbed it several names, my personal favorite being "Daddy's Yum Yum Juice". For this party though I changed it to match my theme. It is always a favorite and quietly dangerous. 

The Blackout is something we came up with after looking at a number of cocktail mixtures online when I knew I wanted something black in color to go with the theme. It too turned out quite yummy. 


Bulldog Brew
Ingredients:
- 1 bottle of pineapple juice
- 1 bottle of cherry 7-Up
- 1 1/2 to 2 cups of coconut flavored rum
- 1 can of limeade, or substitute with 1/4 cup of lime juice and 2 cups of orange juice

Instructions: 
(1) Mix all together, serve over ice and consume responsibly. :)

The Blackout 
Ingredients: 
- 4 and 1/2 cups of black cherry juice
- 1 1/2 to 2 cups of vanilla flavored vodka
- 2 cups of 7-Up

Instructions: 
(1) Mix together, serve over ice. 

The next two recipes are fun dessert recipes that we've found that people also like to snack on throughout the day. 


Dawg Food/Muddy Buddy Mix
 Ingredients:
- 9 cups of rice cereal (usually chex works best)
- 1 cup of semi sweet chocolate chips
- 1/2 cup of peanut butter
- 1/4 of butter or margarine
- 1 teaspoon of vanilla
- 1 1/2 cups of powdered sugar

Instructions:
(1) Measure cereal and put into a large bowl. Set aside.
(2) In a large microwavable bowl, mix chocolate chips, peanut butter, and butter.
(3) Microwave on high for approximately one minute. Stir. Microwave for about 30 more seconds, or until melted.
(4) Stir in vanilla.
(5) Pour mixture over cereal and mix until spread evenly.
(6) Pour cereal mixture into a large gallon or two gallon sandwich bag.
(7) Add powdered sugar into bag and seal tight. Shake bag until well coated.

Special note: Make sure bag is closed tight or you will have a big powdered mess on hands!



Peanut Butter Fudge No Bakes
Ingredients:
- 2 cups of white sugar
- 1/2 cup of milk
- 1/2 cup of butter
- 3/4 cup of peanut butter
- 3 cups of quick cooking oats
- 6 tablespoons of cocoa powder
- 1 teaspoon vanilla
- wax paper

Instructions:
(1) Combine sugar, milk, and butter into a large saucepan. Bring to boil for one minute.
(2) Remove saucepan from heat and add peanut butter, oats, cocoa, and vanilla.
(3) Stir well, and drop small ball by teaspoon onto waxed paper.
(4) Let sit for one hour to cool.

Now for the main event...the chili. Since our tailgate was inside and we had access to electricity, we used our crockpots to make two different kinds of chili. I made some White Chicken Chili and the Hubs made his famous Venison Chili. Sadly, I forgot to take a photo of his chili. He claims sabotage, I claim liquid consumption. For this party, he also came to the dark side and used a crockpot. :)

Both recipes are quite tasty, especially on chilly days like the one we had.



White Chicken Chili
Ingredients:
- 4 boneless skinless chicken breasts
- 1 can of black beans
-  2 cans of corn
- 1 can of diced tomatoes (or Rotel)
- 2 chili peppers, diced
- 1 pkg of cream cheese
- 1 pkg of chili seasoning
- shredded cheddar cheese

Instructions:
(1) Place all ingredients, minus shredded cheese, in a large crockpot (6qt. or larger)
(2) Let cook on low for at least six hours.
(3) Using two forks shred chicken breasts and replace in crockpot.
(4) Let cook on low for an additional 30mins
(5) Remove to serve and add shredded cheese on top.

Special note: My family also likes to place diced avocado on top or eat with tortilla chips depending on their mood.

The Hubs Famous Chili
Ingredients:
- 3 pounds of ground meat
- 2 large cans of chili beans
- 1/2 half of bacon, chopped
- 2 large cans of diced tomatoes
- 2 cans of Rotel

Instructions:
(1) Place all ingredients in a large crockpot.
(2) Let cook on low for at least six hours.
(3) Enjoy!
