Party like a Pineapple!

We've chatted here are there about a little pineapple end of summer break bash that we through just before school started back up, but today is the day! We are going to share all the fruity fun and delicious details of our pineapple party! 



Nothing says summer quite like pineapples and palm trees, and we've been itching to throw a pineapple themed bash for awhile. There are so many cute pineapple themed party supplies available, and, hello - yummy pineapple themed food!

Pineapple Twinkie Pops

 

It's the start of August and we can't believe it! The summer has flown by! Today officially 4 of our 6 Mini Magnolias have headed back to school. While we love school, the carefree days of summer are where our hearts lie. We couldn't go back to school without having at least one last summer soiree, and we celebrated with a little pineapple party (more to come on this soon). And what kind of party would it be without a yummy pineapple themed treat or two?  I introduce to you Pineapple Twinkie Pops.

These Pineapple Twinkie Pops were a huge crowd pleaser, and were a cinch to make. Within just a matter of minutes the pops were complete,  and it was a simple enough process that we were able to get the kids involved. They have an absolute blast anytime they can help in the kitchen, and jumped at the chance when they saw yummy cake treats and sprinkles were involved. They loved making these Pineapple Twinkie Pops, and getting the chance to put their own little touches on each one.


The key ingredient to these pops are these new Twinkies we spotted. They have a ton of fun new flavors - chocolate, fudge covered, Cotton Candy - and since the pops are cake based they made for the perfect "cheat" to the traditional cake pop. No-bake treats are kind of like summer...they will always have our hearts.


HOW TO MAKE YOUR OWN PINEAPPLE TWINKIE POPS

What you will need: 
  • 1 box of chocolate Twinkies
  • 2 bags of yellow candy melts
  • 1 bag of green candy melts
  • 10 treat sticks
  • Clear or white sprinkles
  • Parchment or wax paper
  • Optional: paper straws

What to do: 
  • Unwrap Twinkies and set aside. 
  • Place yellow candy melts in a microwavable bowl. Heat in microwave for 30 seconds on half power. Stir. Repeat until melted creamy smooth. 
  • Take one chocolate Twinkie and dip into yellow chocolate until fully covered. Lay on parchment paper to cool and insert treat stick into one end. Repeat until all Twinkies are covered. 
  •  Place green candy melts into a microwavable bowl. Heat in microwave for 30 seconds on half power. Stir. Repeat until melted creamy smooth. 
  • Lightly drizzle green chocolate back and forth onto the yellow covered Twinkie pop. 
  • Spread sprinkles on top of each Twinkie Pop before it becomes fully cooled.
  • Let cool for approximately 20 minutes or until chocolate is hardened to the touch. 
  • Cut a paper straw in half and slide over treat stick and gently insert into the cake pop. 
  • Serve  and enjoy!

Kitchen Confessions: Pineapple Coconut Parfait

Summer break might be over, but we are savoring the sweet taste of summer for as long as possible. Just before the break ended we threw a little pineapple themed party (more on that to come soon!). We had several pineapple infused foods and sweet treats to offer guests, but this Pineapple Coconut Parfait might be my favorite of them all!

Easy no-bake pineapple coconut parfait

The dessert was so easy and so tasty that I have made it again a few times, and once with a little twist for breakfast. The recipe is a spin off of one Carrie Beth shared last spring. Her Strawberry Shortcake Parfait recipe is always a crowd favorite so I was excited to see that it was just as tasty with a little pineapple twist. 

Throw in a little coconut to the mix and it is to die for yummy! 

Pineapple Coconut Parfait. Great no bake dessert option for summer!

PINEAPPLE COCONUT PARFAIT

Serves 6
Prep time: 10 mins


WHAT YOU'LL NEED...

  • 1 Pre-made Angel Food Cake or pound cake
  • 1 Diced pineapple
  • 2 Cups of shredded coconut, sweetened
  • Whipped cream or Reddi-whip
  • 6 Individual dessert serving dishes (our favorite is mason jars obviously!)



WHAT TO DO...
  1. Dice pineapple and set aside in a medium sized bowl. 
  2. Cut a large slice of the Angel Food Cake and the break into large pieces. 
  3. Line the bottom of your mason jar (or other dessert dish) with a generous amount of whipped cream. 
  4. Place pieces of Angel Food Cake on top of whipped cream. Spoon a layer of pineapple on top. Sprinkle with shredded coconut. 
  5. Repeat layers until all the way to the top. 
  6. Serve right away or place in the fridge for a short time to keep cool. (Note: If placed in the fridge for a long time the whipped cream will settle and the dessert will compact itself.)


Pineapple Coconut Parfait Recipe


As a bonus I tried making this one morning for breakfast and it was just as yummy! I replaced the whipped cream with coconut flavored yogurt (this one is my favorite) and it was the perfect little treat to start my day. 

Now I am all about the parfait.

Kitchen Confessions: 8 Great Tailgate Recipes

One fun thing about tailgating is all the yummy food and drinks you get to consume. Today we thought we would share some of our favorite recipes that we made for Saturday's party. All are quick, easy, delicious, and promise to make any tailgate party quite tasty!



Carrie Beth's Cowboy Caviar is always a HUGE hit whenever she makes it!

Cowboy Caviar
 Ingredients:
- 2 cans of whole kernel corn, drained
- 2 cans of black eyed peas, drained
- 1/2 red onion, chopped
- 2 avocados, peeled, pitted & diced
- Bottle of Italian dressing

Instructions:
(1) Mix all ingredients in a large bowl and stir in approximately 1/2 the bottle of Italian dressing.
(2) Chill for at least one hour in the refrigerator.

And done!

Special notes from Carrie Beth...
"This makes a lot, so plenty for a large group or a party. It is great as a dip, but we have also had it on top of our grilled chicken in the summer for dinner. Best if eaten within a day because the avocado starts to turn brown."

Next is one of my all-time favorites, Buffalo Chicken Dip. I could eat this stuff 24/7. I completely forgot to take a photo of the dip during the party (again, I blame it on the juice). 

Buffalo Chicken Dip
Ingredients: 
- 2 to 3 boneless skinless chicken breast, cooked & shredded
- 8 oz. pkg of cream cheese
- 1 1/4 cup shredded cheese
- 1/2 cup of shredded mozzarella cheese
- 1 cup of ranch dressing
- 1/2 cup of hot sauce

Instructions: 
(1) Mix all ingredients together
(2) Bake at 325 degrees for 20 mins, stir, then continue baking for 25 minutes or until all cheese is melted. 

Special note: If you feel like you want to use your crockpot or have a place to plug it in at your tailgate you can mix all ingredients and then cook on low. Should be tailgate ready within one hour. 

Speaking of alcohol, here are two of the drinks featured at this party, The Bulldog Brew and The Blackout. The Bulldog Brew is actually a shower punch drink that our dinner club modified a few years ago. The Hubs has dubbed it several names, my personal favorite being "Daddy's Yum Yum Juice". For this party though I changed it to match my theme. It is always a favorite and quietly dangerous. 

The Blackout is something we came up with after looking at a number of cocktail mixtures online when I knew I wanted something black in color to go with the theme. It too turned out quite yummy. 


Bulldog Brew
Ingredients:
- 1 bottle of pineapple juice
- 1 bottle of cherry 7-Up
- 1 1/2 to 2 cups of coconut flavored rum
- 1 can of limeade, or substitute with 1/4 cup of lime juice and 2 cups of orange juice

Instructions: 
(1) Mix all together, serve over ice and consume responsibly. :)

The Blackout 
Ingredients: 
- 4 and 1/2 cups of black cherry juice
- 1 1/2 to 2 cups of vanilla flavored vodka
- 2 cups of 7-Up

Instructions: 
(1) Mix together, serve over ice. 

The next two recipes are fun dessert recipes that we've found that people also like to snack on throughout the day. 


Dawg Food/Muddy Buddy Mix
 Ingredients:
- 9 cups of rice cereal (usually chex works best)
- 1 cup of semi sweet chocolate chips
- 1/2 cup of peanut butter
- 1/4 of butter or margarine
- 1 teaspoon of vanilla
- 1 1/2 cups of powdered sugar

Instructions:
(1) Measure cereal and put into a large bowl. Set aside.
(2) In a large microwavable bowl, mix chocolate chips, peanut butter, and butter.
(3) Microwave on high for approximately one minute. Stir. Microwave for about 30 more seconds, or until melted.
(4) Stir in vanilla.
(5) Pour mixture over cereal and mix until spread evenly.
(6) Pour cereal mixture into a large gallon or two gallon sandwich bag.
(7) Add powdered sugar into bag and seal tight. Shake bag until well coated.

Special note: Make sure bag is closed tight or you will have a big powdered mess on hands!



Peanut Butter Fudge No Bakes
Ingredients:
- 2 cups of white sugar
- 1/2 cup of milk
- 1/2 cup of butter
- 3/4 cup of peanut butter
- 3 cups of quick cooking oats
- 6 tablespoons of cocoa powder
- 1 teaspoon vanilla
- wax paper

Instructions:
(1) Combine sugar, milk, and butter into a large saucepan. Bring to boil for one minute.
(2) Remove saucepan from heat and add peanut butter, oats, cocoa, and vanilla.
(3) Stir well, and drop small ball by teaspoon onto waxed paper.
(4) Let sit for one hour to cool.

Now for the main event...the chili. Since our tailgate was inside and we had access to electricity, we used our crockpots to make two different kinds of chili. I made some White Chicken Chili and the Hubs made his famous Venison Chili. Sadly, I forgot to take a photo of his chili. He claims sabotage, I claim liquid consumption. For this party, he also came to the dark side and used a crockpot. :)

Both recipes are quite tasty, especially on chilly days like the one we had.



White Chicken Chili
Ingredients:
- 4 boneless skinless chicken breasts
- 1 can of black beans
-  2 cans of corn
- 1 can of diced tomatoes (or Rotel)
- 2 chili peppers, diced
- 1 pkg of cream cheese
- 1 pkg of chili seasoning
- shredded cheddar cheese

Instructions:
(1) Place all ingredients, minus shredded cheese, in a large crockpot (6qt. or larger)
(2) Let cook on low for at least six hours.
(3) Using two forks shred chicken breasts and replace in crockpot.
(4) Let cook on low for an additional 30mins
(5) Remove to serve and add shredded cheese on top.

Special note: My family also likes to place diced avocado on top or eat with tortilla chips depending on their mood.

The Hubs Famous Chili
Ingredients:
- 3 pounds of ground meat
- 2 large cans of chili beans
- 1/2 half of bacon, chopped
- 2 large cans of diced tomatoes
- 2 cans of Rotel

Instructions:
(1) Place all ingredients in a large crockpot.
(2) Let cook on low for at least six hours.
(3) Enjoy!

Fun Pool Floats for the Whole Family

Happy Friday Friends! This week we are going to change things up a bit for Friday Favorites. We've both been out of town (Carrie Beth just got back from her vacation to Lake Keowee), and were laughing about all the things we have to pack. It's like we are packing our entire house! 

We were both on water based vacations, and since we live at the pool more than half the year, the kids wouldn't let us leave with out their favorite floats. No matter how big they are. Nothing says tropical vacation like an oversized floating pizza.

So we packed all the inflatable things. And our trusty air pumps




We all have a blast on them, and some of them are quite humorous and make for great photo opps. Nothing gives the kids more giggles than Grandpa Magnolia sitting in our giant sparkly tropical llama. 

Here is a look at all of our favorite pool floats! 

FUN & FRUITY

This oversized watermelon slice float was a huge hit last year and is still making its fruity appearance to the pool this year!  For less than $20 and it's ability to last two seasons - this is one that tops our favorite list!

This pineapple float has seen everything from the pool to the beach to being used as a party photo prop. We've had it a few seasons and it's still going strong!

ALL ABOUT THE TREATS

Who doesn't love a good treat? Even better - one that can be enjoyed in the pool! From ice cream floats to floating rosé bottles - there's a little something for everyone! Give us all the floating treats! 


This popsicle float has been a huge hit with the kids. It's just their size and not so big so that the smaller kids can get on it with out assistance.

WILD ANIMALS (other than our kids)

Our own little animals seem to like to float with some of their own kind. From sparkly rainbow unicorns to baby sharks (do do do... Sorry. Couldn't resist) and everything in between these are some of the most fun pool floats we've had. Usually because they are larger and multiple people can fit on them. 


We purchased this giant pegasus float for a party and this week it made it to the beach with us. Our kids for some reason only like it to have one wing blown up. My best guess is so that they can jump off of it easier. 


It's been a blast to have and satisfies Cute who wasn't all that into riding on a large unicorn. 


Meet Pinky. Pinky has been around for years. She's survived multiple trips to the lake, pool, and beach. She's taken abuse like no other pool float, but just keeps on flamingling. It will be a sad sad day if Pinky ever has to go to float heaven. 

Pinky was purchased at Target a few years ago, but this year they updated her to a Rose Gold version

HAVE A LITTLE COMPETITION

Okay this might be the category that excites the dad's in our crew the most. But the kids think it is hilarious. This year there seem to be a ton of competition style floats. Our kids have been begging for this one...




For less than $20, it's more than worth the entertainment.
